Pumpkin Cake Recipe

Ingredients
  • 4 eggs
  • 1⅔ cups white sugar (350g) (Note 1)
  • 1 cup vegetable oil (or canola)
  • 15 oz / 420g can pure pumpkin, or 2 cups mashed fresh pumpkin (Note 2)
  • 2 cups all purpose / plain flour (300g)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon powder
  • 1 tsp salt
  • Frosting
  • 6oz/180g cream cheese, at room temperature
  • 2 sticks / 225g / 1 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 4 cups (480g) confectionary / icing sugar (sifted if clumpy)
